There are an abundance of questions and understandable concerns regarding the outbreak of the Coronavirus, especially in Washington State. Food Safety is one of them.

At Angus Brands, we want to assure our customers that we continue to go above and beyond USDA Food Safety mandates, incorporating our other four in-house Safety & Sanitary Policies, including basic Good Manufacturing Practices (GMP’s). Rest assured that the virus spread has no impact on food, food preparation, or food consumption. Additional information that supports this fact is available via this article from Meat & Poultry. At this time, we’ve also not had any interruption in our supply chain from our current vendors.

Additionally, we have guided our employees so they can know and understand the difference between a common cold, the flu, or if they have  symptoms of this virus. We are all in at Angus Brands to get through this temporary crisis. Curry’s Culinary Corner: Stop poking!

You know you want to do it. We all do. It’s a worldwide problem: Burger-checking-and-rechecking-is-it-done-yet-overkill. We all say, “Just a little poke is all.” But don’t do it! Step away from the burger! Hint: only flip once. Don’t play with your food and don’t keep poking it to check the temp when you know it’s not done. The more you flip, the more juices drain and the more flair ups. The more pokes, the more moisture drains. Cook for about 5 minutes (I literally use a watch with a second hand) on the first side, flip and cook another 3-4 minutes on the second side. I then check the temperature and will add cheese the last 30-60 seconds. Juicy perfection.

It’s all about the fat

Ground chuck is a popular cut for burgers, maybe the most popular. That’s because it comes from the neck and shoulder area of the cow, a region that tends to be very flavorful and on the fatty side, with 16-22% fat content. “80/20” is how we refer to it and tends to be our beef blend of choice.

Hamburger that has been designed as a typical restaurant ratio is 80:20 lean to fat. Angus Brands tones it down just a bit with our 85/15 ratio which is recommended as a better ratio for taste and texture.

Which brings us to the question: Why does ground beef have fat?

Fat helps give ground beef a wonderful, buttery beef flavor. Generally, the higher the fat content in ground beef, the more juice it will deliver and flavor it will preserve. However, leaner grinds can deliver an equally desirable beefy flavor, depending on how they are used. So understanding what lean points are best for various applications can help you enjoy ground beef to the fullest without sacrificing your healthy diet.

Lean Points: 73/27 – 81/19
Attributes: Exceptional flavor and juiciness · Helps bind meat together for patties or meatballs
Best in: Burgers, meatloaf, meatballs, Salisbury steak

Lean Points: 83/17 – 89/11
Attributes: Delicious flavor and great texture · Ideal for use when beef is the king of the plate
Best in: Meatballs, leaner burgers, pizza topping, meatloaf, chili

Lean Points: 90/10 – 92/8
Attributes: Great for use as an ingredient when cooking · Ideal for making your favorite meals leaner
Best in: Lasagna, chili, enchiladas, burritos, spaghetti, casseroles, tacos, sloppy joes

Lean Points: 93/7 – 96/4
Attributes: Leanest grinds available · 96% lean grinds are given Heart-Check mark as a heart-healthy food · Primarily used as an ingredient in lean, healthy foods

A first-of-its-kind research study looked at how consumers buy and consume ground beef. Review the findings below to understand the factors that go into consumers’ purchase decisions.

What factors impact consumer selection of ground beef?

  • When shoppers look to purchase ground beef for hamburgers or other ground beef meals such as tacos, spaghetti, or casseroles, freshness is the key factor that influences their purchase. They’re looking particularly at the color of the meat and the date code on the package.
  • Right behind freshness, price per pound and leanness are the next two factors that most influence purchase decisions. With a year-round low average price, cost-conscious shoppers are often drawn to ground beef over other options in the meat case.
  • After freshness and price, the third most influential factor is leanness. Be sure to stock a variety of types, from 70% to 94% lean.

How are shoppers influenced by the ground beef eating experience?

Wide appeal is an important factor in shoppers’ purchase decision hamburgers and ground beef meals. Here’s how shoppers associate ground beef with an overall positive eating experience:

  1. It’s prepared the way you want it
  2. It has great taste
  3. It’s provides a juicy, pleasurable eating experience
  4. It appeals to the whole family
  5. It’s (burgers) a great choice when getting together with family or friends
