Food show fun – get yourself a sample!

Earlier this month Angus Brands was at the Spokane Convention Center displaying a variety of products. If you were there, we hope you had an opportunity to swing by our booth for a taste! Some of the items we had at the show:

  • Assorted fresh cut steaks and chop, cut from highest quality beef, pork and lamb.  Did you know Angus Brands specializes in custom cut poultry and wild game?
  • Angus Brands’ signature Apple Cranberry Sausage.  Nothing says breakfast like real maple syrup joined with Washington State fire roasted Fuji apples and tart Craisins… wake up and smell the sausage!
  • Waddell’s Scottish Ale Sausage. This is a sausage where you won’t know whether to drink it or eat!  Waddell’s North is a local restaurant and brewery that asked us to make them a signature Scottish Ale Sausage.  The sausage link turned out so good that we want the world to try it. Because we’re that nice. 🙂
  • One of our newest smashburger creations:   Big Thyme Burger, infused with fresh thyme and roasted garlic.  We had them standing in line to try the big flavors in this burger.
  • Rounding off the burger table was another of our new creations, the Sante Fe Burger.  This bold statement combines ground beef with our fresh ground chorizo. One bite will take you south of the border with cilantro, white onion and high temperature pepper jack cheese.  Ole’!

With hot samples right off the grill, we had a blast showing off our locally handcrafted products.

Caramelized onion recipe

A great topper to any dish, here’s a great recipe for caramelized onions:

Caramelized Onion
2 tablespoons olive oil
2 large yellow onions sliced
3 tablespoons brown sugar
2-3 tablespoons balsamic vinegar
Salt and black pepper to taste

Heat oil in fry pan, add sliced onions and cook very slowly over low heat for 15 to 20 minutes. Stir occasionally. When onions are softened and tinged golden brown, deglaze with balsamic vinegar, and add brown sugar- this will start the caramelization process. Continue to cook over low heat for another 5 to 10 minutes, stirring occasionally until sticky and caramelized. Add salt and pepper to taste.

Ground bison? Yup!

Honoring our local heroes at our annual BBQ

On Friday, July 8th Angus Brands served lunch to thank our local heroes: Spokane Police Department, Spokane Valley Police Department, Washington State Patrol, Spokane County Sheriffs and the Spokane County Fire Department were invited. They were served a complimentary cheese burger, chips and drink. We had a blast supporting our community heroes. Can’t wait for next year!

Curry’s Culinary Corner: Stop poking!

You know you want to do it. We all do. It’s a worldwide problem: Burger-checking-and-rechecking-is-it-done-yet-overkill. We all say, “Just a little poke is all.” But don’t do it! Step away from the burger! Hint: only flip once. Don’t play with your food and don’t keep poking it to check the temp when you know it’s not done. The more you flip, the more juices drain and the more flair ups. The more pokes, the more moisture drains. Cook for about 5 minutes (I literally use a watch with a second hand) on the first side, flip and cook another 3-4 minutes on the second side. I then check the temperature and will add cheese the last 30-60 seconds. Juicy perfection.

Who says grilling season is over?

Some say the grilling season is just about over. When summer ends, the BBQ is retired until spring. But there are those (like myself) that feel there is no “end season to grilling.” Why miss out on perfectly grilled juicy burgers, steaks and just about anything else that brings forth that summer flavor all year round? Us die-hards just decide what we will be grilling next.

I’m already getting in the mood to sharpen up on my bratwurst grilling techniques again for Oktoberfest. Preparation is everything. I remember what I did last year, but the question is — what will I do different this year? There are so many fun options to try. I do like simmering our brats in St. Pauli Girl for starters, and then finishing them on the grill for the perfect brown grill marks. Just as the natural casings we use start to crack open and the juices begin to ooze, throw them on a perfectly toasted hoagie bun smothered with sautéed sweet onions. I do play around with mustards for some additional excitement. I also see in my future roasted garlic sausage for Seahawk Sunday football.

Until then, I say — “grill away.”

The year of global flavors

If you haven’t already noticed, somethin’ different is a brewing at your local grocer and favorite restaurant. It’s a little bit sweet, a little bit spicy, and a whole lotta’ global.

We’re talking about the rise of international inspirations intertwined into our foods. Population shifts towards America becoming an even more ethnically diverse nation plus exposure from social media is making the world a smaller place.

The result is a trend towards more exotic tastes and spicier bites. From curry potato chips to Siracha-doused everything, from hummus (in lieu of mayo) to kimchi-flavored beef jerky, and of course our very own Angus Brands flavor-forward selections — nothing’s off the table.
